Does that mean that the moment i convert my first blu ray i have 30 days before it expires or do I have 30 days from when i download it. Also when MakeMKV is starts to charge for the program will it be available in the Mac App Store??

It starts counting down from the first time you use it on a HD disc.

Now if your permissions are somewhat off, every time you use it, it will start a new 30 day time frame.

Or if your permissions are correct, you can just use the free key that is posted regularly.

While I can't speak for the MakeMKV development team, I strongly doubt that Apple will let something like MakeMKV into the App Store.
