Multiple versions on disc - any way to compile?

Is there any way to avoid ripping each version (say 2 versions of a movie on a single disc) as a seperate file? Like can you dump the extra bits to another smaller file and have VLC point to several files to play a certain version of the movie?
For example at the moment I’ve ripped Gladiator but each version is something like 80GB so both versions take up 160 odd gig. Is there any way to have both versions but somehow the extra bits are dumped off to another file and can be optioned when played back?
