converting BDMV folder to 1 .mkv file

So I downloaded this HD DEMO bluray disk and it is in the natural bluray file structure with the main folder being BDMV. I pointed makeMKV to the index.bdv and i went about it's business converting it over to .mkv. only problem is, it made multiple .mkv files instead of 1 large one with a menu.

What you've described indicates that your demo disc is comprised of several separate titles.
1) MakeMKV makes converts EACH title to an .MKV.
2) Presently (regardless of program used) Matroska/MKV does not support the inclusion of active menus
