You can use Rosetta 2 to run applications that are not optimized for Apple Silicon, by installing Rosetta and opening MakeMKV through it. Check to see if there is a beta version of MakeMKV that is compatible with newer hardware. Also, make sure MakeMKV is granted full disk access in System Settings > Security & Privacy.
