Let's say I buy a WH16NS40 1.05-Stock. Do I still need to flash the drive to the recommended firmware if I'm using AnyDVD with MakeMKV? I mean, I read that you don't need to flash anymore, that MakeMKV is now taking care of that. So, what would be the difference between not flashing vs flashing to recommended firmware WH16NS60 1.02-MK?

Flashing is required on SOME drives if you're ripping 4K UHD disks.

AnyDVD is a separate program, not needed for use with MakeMKV.
