The quality of the MKV differs from the original

After converting Blu-ray to MKV, the image is different. The colors become more saturated with a hint of red.

Nah it's the playback device or your tv settings

are these UHD rips?
if so it maybe the players are trying to use the Dolby vision enhancement layer

Check if your movies are Dolby vision titles that would be the reason the players may or may not be showing it correctly the m2ts would not show it just default back to standard hdr10 so that's why they look different.
You maybe able to have the players ignore Dolby vision data

I tried to make rips using DVDFab and mkvtoolnix . None of them made exact copies. tsMuxeR more or less copes with this task, but it does not make MKV.

Because there is no re-encoding or quality loss in remuxing a Blu-ray to MKV, it sounds like your playback software may be handling Matroska files differently from M2TS. As a test, why don't you try to have tsMuxer remux your MKV into an M2TS. It would be interesting if this (re-remuxed) M2TS file plays differently from your source. If you'd like to frame-by-frame comparisons, I find Avidemux to be helpful.

I explained the utility of testing a repackaged file was to determine if something may have gone wrong with the M2TS to MKV step.
I'm sorry you don't see the difference between original and rip.

Believe me, I'm much more sorry that you don't understand precisely why there is no quality difference between the files.
