Getting 5.1 audio off of Blu-ray

Hi everyone, quick question as I am new to doing this. I'm trying to get clean dialogue from movies to use in a video I'm putting together for my friends and family for Christmas. All my searching and experimenting has led me to trying to take the 5.1 audio from a movie to get the dialogue in the center channel without all the other background music and noise. Now if I understand correctly I can use makemkv, select the 5.1 audio on the DVD and then rip it. I can then import the file into an editor like Adobe audition or audacity to get the pieces of dialogue I want and then export them to put into my video editor. Is it that straight forward or is there more configuring that I'd need to do to get to the center channel?

Should work. At aware that aduacity can import an mkv file, but it does.
