How can I set the bitrate of the movie?
You can't. MakeMKV does a direct dump of the video stream without editing it. It is focused on making a full quality rip of the disc, allowing you to pick audio/subtitle tracks. It doesn't process the audio/video in any way.
Use Handbrake or some other product to compress the output if you like.
