Hi,
I would like to purchase a license for MakeMKV, but... I have a special requirement.
I only use it to copy recordings from my Panasonic blu-ray recorder onto DVDR disc. I never use it to backup purchased discs.
So I would like to purchase a version that only works with blu-ray discs from my Panasonic blu-ray recorder and therefore does not need to "phone home" over the internet every time it runs.

The reason for my request is that I have a purchased license for AnyDVDHD, which became useless when that company disappeared & then reappeared.

MakeMKV only "phones home" to check for a newer version, and (as needed) get disk-specific decryption information. You can disable this by going to Preferences->General, and unchecking the box next to "Allow contacting web server for updates".
