Create MKV from ripped disks?

Hi, all. I started a DVD collection a few years back to run on my PCH (popcorn hour), and at the time I wasn't familiar with various ways of ripping files. As a result, I thought it would keep the highest compatibility to rip the disks straight to their video_ts files via AnyDVD. I assumed I could then convert them to any format from there down the road.

Well, it seems so many devices now support the mkv format that I wanted to convert my collection to mkv for live streaming on the ipad, etc., (not to mention having a single file instead of dozens of files for each movie) but I can't see any way to do this with the mkv software. Is it even possible to convert these already-ripped disks? The ripped DVD's exist on a folder in my server, with each video having a folder named via YAMMM.

I have several hundred movies, and I would like to make this as simple as possible. I do have all of the movie disks--they're all boxed and stored in my media room closet--but I shudder to think about re-ripping all of these movies again.

As long as the ripped video data includes the VIDEO_TS.IFO file and all the other requirements, you should be able to use the "Open Files" Menu/Toolbar item to select the video data for each video.
