When I rip a DVD using MakeMKV, does it include subtitles by default?
They are ending up there (if I want them) in some programs such as VLC but not in others. Just wondering how they are getting there. Pretty much has to be MakeMKV I think... right?

MediaInfo can show you what is in a .mkv file, including any subtitle tracks.
If you've got Expert Mode turned on in MakeMKV you should have a lot of control over what audio and subtitle tracks MakeMKV puts into a rip.

Apparently I had set up ccextractor some time ago, so I guess it is ripping subtitles somehow, although I don't see any additional external files when I rip the video.
MediaInfo tells me that there are two text streams (VobSub / UTF-8) so that means sub-titles, right?

Yes. The VobSub stream is probably the subtitles that were on the DVD. The UTF-8 stream is probably the output of ccextractor.
