Hi I want to rip my hd dvd’s and the way I last did it many years back was a Xbox hd dvd player, does makemkv work on this ?

Are you mounting the DVD player as a DVD device to your PC, or expecting MakeMKV to run on the Xbox?
MakeMKV runs on Mac, PCs, and some ARM devices. But the Xbox isn't a one of those.

Are HD-DVD still supported (Ver 1.17.4) ?
Older versions of MakeMKV still work with HD-DVD, but you might need a paid-for license to use them. I'm not sure if the beta key works with old versions of MakeMKV.

What or how were they ripped originally? I know I had some of the images years ago, before Makemkv I think, but I never thought of how they were sourced.
