Is there any way to avoid ripping each version (say 2 versions of a movie on a single disc) as a seperate file? Like can you dump the extra bits to another smaller file and have VLC point to several files to play a certain version of the movie?
For example at the moment I’ve ripped Gladiator but each version is something like 80GB so both versions take up 160 odd gig. Is there any way to have both versions but somehow the extra bits are dumped off to another file and can be optioned when played back?

Generally speaking, no. MakeMKV certainly will only put a single title in a .mkv file. Fortunately, storage is cheap, right? 
If you search around long enough, you'll find xin1generator. The last update to it was more than 10 years ago and I have no idea if it'll work; I have never used it. And even if you manage to create a .mkv file in this manner, playback support is probably low.
