Setting a default subtitle
Is there a way to mark a subtitle as the default track? (So it turns on automatically)

That's funny - I see a lot of posts asking how to do the opposite.
Download the mkvmerge GUI toolset. Within there, run the MKVMerge tool and choose File> Header Editor. From there you can edit the individual header elements, and save them without having to re-output the entire file.
