Hello
When I copy a DVD to MKV then always the wrong language of the DVD is set. Also Subtitle are always visible and have to hide this in the player.
Is it possible to set a default language, Subtitle and Ratio Aspect before i copy to HDD?

Well, you can always select what it does and doesn't copy from the disc.
I personally don't find the preferences for having MakeMKV autoselect tracks to work the way I want so I always manually select the tracks.

If you look at those pictures, you will see a wrench icon along the tool bar in MakeMKV.
If you click on it, and you go to the Language tab, you can set your preferred language.
If MakeMKV doesn't set the preferred language as the default language, you could use the header editor in the mkvtoolnix package to change the which track is the default track.
