I just started fooling with MakeMKV. After clicking Backup in the file menu, I notice you can turn decryption on and off. Does this mean you can choose whether to keep the original encryption in tact when you copy the disk to the harddrive?

Yes.
Sometimes the decryption key isn't available immediately; making an encrypted backup will let you decrypt everything later, when the key is added to the hash key file. All without having to get your disk out again.

Greatest feature ever!
I did notice an oddity earlier a customer did a full disc backup of Star Wars 1977 and on playback the text that is shown that sets up the movie was in Spanish.
Makemkv settings were Auto and English.
He’s trying it again English / English we’ll see what happens.
