cant see how to remove audio tracks using the header editor, i hear it will be quicker than remuxing

You can set the Track Enabled" flag to "no" and the track will no longer be visible (if the player is reading the flags correctly).
This does not delete the track and it still takes up space in the file.
The only way to delete it physically is to make a new copy with mkvmerge. This is about as fast as copying the file.
