VC-1 supports was fixed in the MakeMKV 1.2 . Please download the latest version - it should work now.

That totally depends on your player. Assuming you're using windows media player, look for a tiny "MKV" icon in the system tray. Right-clicking on this icon will bring haali menu where you can change audio and subtitle streams.
