Have you looked at the messages already in the forum explaining how to bypass various blockages done by internet providers for HK downloads? A prime example would be:
hkdata.crabdance.com or hkdata.fairuse.org not found

On my end it still says can "The volume key is unknown for this disc - video can't be decrypted".

I am having the exact same issue, and I have tried all the same fixes ...

Hash keys are how disks are identified to determine what is needed to decode them. MakeMKV checks unknown keys against a table (the Hash Key table) to get that... Except that table has to be downloaded, if the key you have isn't in the copy of the table you have already.

That table is kept up-to ...

I was having a problem accessing the server to download the latest HK data. Tried a number of suggested workarounds. Went to bed, tried again in the morning and all was OK. Sometimes a little patience might be all that is required

was getting a common error of "automatic SDF downloading is disabled or failed" when just opening the software.
brand new to MakeMKV. Never touched it before. already paid for the software, just installed it today.

I am able to resolve hkdata.crabdance.com, and I can point a browser at the address. However, the SSL certificate is either missing or invalid. Thankfully, http traffic seems to work but I don't know what path I need to provide in order to manually download what MakeMKV is trying - and failing - to ...

Is there anyone that can confirm that a server is up and running with the SDF file and/or the HK with UHD-keys?

IDS/IPS and Adblockers on my Firewall blocked the Requests.

As far as I can see, you are connecting to a remote machine. Which operating system does it use?
Most Linux operating systems display the OS name and version number in the welcome message after successful login on SSH.

Fixed, should work now. As a side note, these resources do not require a valid DNS entry to be operational.
