There are not separate beta/regular programs, just beta (free) and permanent keys. Operation of the program is the same, whether you're using the beta key or a permanent key. How big is the .tgz? It is rare for them to be "too big" for modern mail services, which will typically allow attached files as big as 7MB.

Upmixing is outside what MakeMKV will do. If you're planning on doing that later, your best bet is to have the DTS-HD MA track intact.

If your player has no trouble with that, you do not need to extract the DTS Stereo track. Using the DTS-HD MA gives you the best audio for later "play".

You simply select the forced subtitle track from the two provided. I'd actually recommend pulling both, then use VLC or similar to play the file, and switch between the subtitle tracks to see which one has "everything" in it, then make the OTHER track the default one. That second part invo...

Nothing. The disk was authored with no subtitles flagged as forced, so the "forced only" tracks have nothing to save.

The majority of disks are authored with separate subtitle tracks for "all" and "forced only" subtitles.

That depends on your player. If your player does not stumble over the HD version, there is no reason to keep the "lossy core", because it's already part of the HD stream. Some players, though, cannot find the lossy core within the full stream, which is why MakeMKV offers to pull it out for...

Selection rules are no longer set in the profile, and haven't been for some years.

In the GUI, you can set the selection rule in the Preferences->Advanced tab (Expert mode must be enabled).
