Are you shutting down your Mac or putting it to sleep?
If shutting down, have a look at Settings > General > Login Items to see if MakeMKV is listed.
If putting to sleep, open Activity Monitor and look for MakeMKV in the Process Name list. Click on it then click Stop > Force Quit.
