It varies with the disks. Some are mastered with individual episodes (most of them), while others have one big file with 3 to 150 episodes in it.

Making individual episode files sometimes requires other programs.

You might not have Expert Mode turned on in MakeMKV's preferences. With that turned on, you should then be able to select individual titles.
