Usually when I see a problem like this with DVDs I can workaround it by deselecting the subtitle tracks.

Outside of brand new releases I'm only aware of 1 or 2 discs that MakeMKV can't handle so I can't relate to anything you're trying to claim.

The 0800 has conventional subtitles and supplementary audio tracks. It looks like the sing-a-long subtitles are specific to the 0700. To get the most ideal result you have to make an mkv from both and then use a tool like MKVToolNix to add the subtitles from 0700 to the file for 0800.

The prior releases were also this way, and discussed before. MKVToolNix can be used to separate files and/or combine audio tracks as needed.

I did a scan of TV episodes and found a few from the 1960s Bat Man series that had duplicated audio. I also found another series (Parks & Recreation ) where a few of the seasons (2 and 3) almost all episodes had duplicated audio that was wasting 800 MB per episode.

As an experiment I closed both MakeMKV and just launched one for the BDR-XS07U and still experienced the issue. So, it seems like it something specific with MakeMKV and the BDR-XS07U rather than about concurrent instances.

There's a DVD set of Series 1-4 of Great British Railway Journeys. On one of the discs there's an episode that doesn't get saved. In normal mode it reports the following:
