To answer my own question ... You can pre-rip the DVD in question with dd if=/dev/sr0 bs=2048 conv=noerror > Desktop/blah.iso The conv=noerror tells dd to ignore errors. And then mount this image for MakeMKVing. I don't know if all the errors in the image will break the MakeMKV part of the process, ...

MakeMKV takes whatever format the disc is in, and re-packs it into a MKV container, so say you are ripping blue-ray - your MKV would be packed with a MP4/h264 video, or perhaps VC-1. I partially sorted this out - Obviously the streamed file has multiple audio tracks. Of course! (doh!) However, streaming my copy of "Open Season 2" which has 3 languages (according to the cover: English, French & Spanish), this gave an stream in which VLC said there was 7 audio tracks...
