MakeMKV has no trouble ripping to MKV, so I do not think it's the UDF file issue. Because MakeMKV has a built-in UDF parser. Forget about MakeMKV, just insert the disc, naviage to it in Finder, right click, "show package contents", navigate to BDMV folder, see what happens. Please do call...
