It's relatively easy for me to do this in DVD Shrink with DVDs; typically I don't have to click a lot. In MakeMKV Blu-ray though, it auto-selects EVERYTHING, and trying to de-select what I don't want... there's dozens/hundreds (?) of things, most of which I know I don't want. MakeMKV can not recogn...

Have you tried one of the batch ripping tools mentioned here on the forum and compared the total rip time to your approach?

Since most US BDs don't have tracks with forced items you could uncheck that box and have MakeMKV mux the file with consecutive tracks.

To do it in one hit, play back the video prior to ripping it cycling through the audio tracks. Once the descriptive track is identified, uncheck it in MakemKV.

According to this post you can copy the file with any name into the MakeMKV data directory which location you can see under Preferences > General. With expert mode enabled on this tab you get the tab Advanced where you should be able to select the profile 'fatez' from the default profile pulldown me...

MakeMKV Batch Converter does not seem to support special chars like German Umlauts; titles with them will be skipped.

Sounds like you're using a tool chain of several apps to rip your files. You might want to add one more step to identify unflagged forced subs by stream size and item count similar to BDtoAVCHD's 'Scan Bitrates' function that works quite well.
