Since MakeMKV can't recognize forced items inside DVD tracks you'd have to extract the track that you suspect of containing them and then use BDSUP2SUB to extract those items into a separate track to be manually muxed into the mkv with MKVToolnix.

Using MKVToolnix I was able to change the subtitle order so that the 2nd sub track became the 1st. This is because my OPPO does not recognize the "default" flag for MKV. I don't own an Oppo but you could try MKVToolnix's header editor to flag the second track as forced and default. Usuall...

That actually seems to be the case: when you open the GoT DVD in MakeMKV, you don't get the forced subtitle track you can select with BDs. The only thing you can do is extract the sub and use BDSUP2SUB to create a new track with only the forced items to be muxed into your MKV with MKVToolnix. Or be ...

I'd agree srt often will suffice. By function at least. But "more than fine" may be overgraded. How srt will look on-screen, depends on the player's onboard bells and whistles to handling text-based subs. The format was basically developed as simple text only, without thought of any furth...

If it's actually burnt in then you can't turn it off. Also, MakeMKV does not touch the video.

Subtitle Edit can open the sub from inside the mkv but it takes a while so you might as well extract it with MKV Cleaver or something.
