Personally, I use a local external SSD as my work area when I'm ripping discs and making .mkv files. Only when I'm satisfied with my files do I bother to push them to my NAS. Reasonably sized reasonably fast external SSDs are reasonably priced these days.

I wonder if it would be easier to download French .srt subtitles for the movie in question? Many playback systems support .srt subtitles as a sidecar file in the same directory as the .mkv file containing the movie.

Regarding Plex and PGS subtitles, it depends on the capabilities of the client as wmcclain's Grok output indicates. I use the Plex app on an AppleTV 4K and it displays them using Direct Play (without transcoding).

My minimum title length is set to 15 seconds I think. I generally grab all the useful content from a disc, like any behind-the-scenes stuff or deleted scenes and the like.
