At a risk of sounding dumb why not simply add where ever you have made the MKV to as a source in PLEX? Best bet is on the mac goto system prefs and sharing, then advanced and turn on SMB. Back in sharing click on the plus icon to add a share folder and navigate to where you are storing the MKVs. Bac...

Firstly thankyou to all responsible for bringing this to mac what a fantastic product, currently I use rippit to get dvd to drive then DVD2OneX to make it into a VOB. However this has cut that hassle so thankyou. My only request is for the future automate the process, i.e. I insert a DVD it reads it...
