The most likely reason is the enclosure. The firmwares are in most of the cases outdated and create problems. Please google for firmware updates or let me know what is the detailed version of this enclosure and I will google. Only second option of course!

I guess you forgot to reboot after flashing 3.10 MK.

There is updated firmware that will fix the problem. No -of course it will not compromise the enclosure. Just make it better.

I will extend the testing and will be flashing one of my ASUS drives to 3.03 MK. It might take until the end of this weekend but I will do and report then.

Will the custom firmware still keep the drives as "UHD friendly" for other software if flashed to the modified MK "UHD official" version?
Or can only MakeMKV work with them then?

I'm also pretty sure it's the enclosure.
Open it and check the type of main chip doing the job. That's the biggest chip you see on the PCB.
If it says it is a JMS539 I have some remedy for you. If not - you have to check and ask google.
