Did you try as I suggested to the OP and connect a monitor or use X Forwarding?
I've never used makemkvcon, but out of curiosity I gave it a try on my Linux Mint server and it works fine with 1.15.1.

Plex has no problems with mkv support that I've ever heard of.
mkv is well supported. Complain to Micro$oft about their refusal to recognize it.But it starting to seem like apps that will play these MKV files are few.

I guess you don't understand what MakeMKV is for. It's for Ripping DVD/BD's, not for transcoding MKVs.

A 1 minute file should not take long at all to rip. If it's taking that long for you then either you have a dirty/damaged disc, or your drive is defective. The audio format makes no difference as it's just copying the tracks without change.

I've seen this also on Linux Mint 19.3. It's never really bothered me since I rarely cancel a rip so I haven't reported it. If wanted I'll reproduce the problem with logging turned on.

Sounds like your settings file may have been corrupted.
What does ~/.MakeMKV/settings.conf look like? Or, just rename it, start MakeMKV and add your key again and a new file will be created.

I would guess it was just the disc. I've ripped a Doctor Who Bluray that was region B and it worked fine for me.

I'd suggest the you connect a monitor (or you should be able to SSH in with X forwarding turned on) and try makemkv via the gui to verify if it's makemkvcon not reading the file, or another problem.

Thanks for the hint. I tried DVDAExplorer in Wine, but it didn't work. So thinking back, I tried foobar2000 with the DVD-Audio addon. Then I was able to rip to an uncompressed WAV.
From there I can use Audacity to convert to FLAC.

Yes that's enabled. I was able to rip the 'flip side' of the disc (the DVD-Video) with no problems. I looks to me like MakeMKV just doesn't like DVD-Audio discs.
