I also have realized that only certain versions of certain movies actually have the 7.1 soundtrack on them. Sometimes even store exclusives.

I had the similar issue.
You have to go into the Title, expand it, and then select DTS-HD. For some reason it is NOT selected by default. Hope that helps.
