I did some more searching, and found this forum post:

where others were also running into this same issue.
The suggestion was to disable ripping subtitles from the affected titles, and that did work as a solution for me ...

Update, borrowed another Blu-Ray drive from a friend to see if it was something going on with my hardware, but hit the exact same LIBMKV error:

I have ripped hundreds of discs with MakeMkv, and this is the first time I've encountered this. While ripping a brand new disc some, but not all, of the titles fail right at the end. And by that I mean the ripping progress bar gets all the way to the end with no errors, and then there is one LIBMKV ...
